Hey friends! We are officially 2 days away from Christmas, which leaves you a day and change to shop. I ventured out to the outlet malls yesterday. Oh boy, was that a bad idea!
I think i’ll just stay home and make microwave caramel chews instead. I shared this simple 6-minute and 7 ingredient recipe over on Oh Sweet Basil yesterday and is perfect for gift giving around the holidays! You know, for those few people that somehow fell through the cracks and now you might have to run to the mall and grab a gift but don’t really know what to get them. Food. Everyone eats it.

I have to say these microwave caramels are quickly becoming my favorite because they remind me so much of my childhood. Did you ever have those Werther’s soft caramel chews as a kid? These taste just like that. My grandpa would always have a small stash in his pockets to share with the grand kids. They take me back.
The ingredient list for these caramels is simple and you probably have most if not all of them on hand. I added a little extra salt to the top layer of caramel just before I popped it in the refrigerator to cool. The extra sea salt makes them so addicting! I’m totally a sucker for the sweet and salty flavor together.
