I have a borderline inappropriate love for salsa. There. I said it.

I promise you, if there is a will, there is a way. I will sneak salsa into almost ANYTHING. Okay, not like dessert or anything, because that’s just weird. But pretty much everything else. I’ve used it as dressing on a salad. Healthier, and so much tastier than salad dressing. And just plain old, gosh-darn good. I almost always have to have salsa with scrambled eggs in the morning — yuh huh. I scramble the eggs up in a skillet, toss in some crushed up tortilla chips (just like a tablespoon or three) and some cheese and let it all melt up. Put all of that on a warm tortilla and top with a couple tablespoons of this blender salsa. You’ve got to try it. It is seriously the best breakfast taco of your life. If I could, I would eat this for every meal of the day. Every. single. day.

Sorry, guys. It’s not that I wanted to keep this 5 minute salsa recipe away from you or anything. I just figured that you might appreciate it a little more if I brought it to you, say like, Cinco de Mayo. But when my slow cooker Hawaiian pulled chicken sliders failed (and I do mean failed miserably) as in I could not eat more than a bite. And I contemplated whether it was worth swallowing. Yuh huh. That bad. Anees, on the other hand, said it was pretty good. My tastebuds totally didn’t agree. Sorry not sorry. You reeeeeeeeally would not be loving those sliders. But I do know that this blender salsa is money, honey! Totally the complete opposite of those horrendous pulled chicken sliders.

So this is the quickest you’ve probably ever made salsa in your entire life. And that too salsa that will live up to it’s name. It is definitely restaurant quality.

Just 5 quick minutes and you’ve got dyno-mite salsa at your fingertips.

I dare you not to eat it straight from the blender. Like for reals. Because sometimes (read: most times) the hubby and I are ready with chips in hand when this salsa has finished pulsing. It makes a total of 5-5 1/2 cups of salsa and for normal people, that’s A LOT of salsa. Enough to last for at least a week, i’m sure. For the hubby and I, it’s enough to last us all of Wednesday. Okay, I kid. Maybe like Wednesday and half of Thursday.

I mean I love me some good-quality restaurant salsa. But when I get mediocre salsa from a restaurant when they’re supposed to be the Jedi masters of salsa everywhere, i’m going to be pretty upset. Ingredients:

  • 2 (14 oz) cans fire roasted tomatoes, drained for chunkier salsa
  • 1 jalapeno, ribs and seeds removed
  • 1 lime, juiced (2 1/2 tablespoons)
  • 1 small white onion, cut into chunks
  • ½ bunch fresh cilantro
  • 1 (4oz.) can diced green chilies, drained
  • 3 cloves of garlic
  • 1/2 teaspoon chili powder, omit for milder salsa
  • 1½ teaspoon cumin powder
  • ½ teaspoon oregano
  • 1 teaspoon sea salt
  • 2 teaspoons sugar

Directions:

  1. Pulse ingredients together in a food processor or blender until you reach desired consistency. Adjust seasonings to taste.

Notes:

  1. Serve fire roasted salsa immediately or place in a sealed container and refrigerate for up to 3 days.

  2. Make sure to purchase fire roasted tomatoes that do not contain any seasonings. Some stores sell ‘salsa style’ fire roasted tomatoes. Those already contain salt, oregano, diced chillies, etc and will make the flavors in this recipe overpowering.
